| Prawns Cocktail 'Piri Piri' |


- Prawns, 25/35 size, peeled, cleaned with tails-on 7 headless 90gr
- Lettuce, shredded 15gr
- Pineapple, dices 30gr
- Spring Onions, finely diced. 5gr
- Sweet Peppers, red & green, finely diced. 5gr
- Tomato Wedge.(1no.) 20gr
- Chervil Spring 1ea
- Lemon Wedge(1no.) 30gr
- Piri Piri Dressing 30ml
- Lemon Juice 10ml
- PIRI PIRI DRESSING: YIELD: 1LT.
- Cocktail Dressing 800ml
- Coconut Milk (or reheard) 100ml
- Coriander fresh, chopper 10gr
- Cayenne Pepper 3gr
- Soya Sauce 20ml
- Tabasco Sauce 10ml
- White Rum. 50ml
- Salt & Pepper Seasoned To Taste.

- Take the cocktail Glass put inside the lettuce to form a bed.
- Place into a mixing-bowl, the prawns, spring onions, pineapple & sweet peppers. Pour in the lemon juice, refresh then add the piri piri dressing & mix in all ingredients well.
- Spoon carefully inside the glass the prawns mixture & adjust the garnitures on top (tomato & lemon wedges, chervil spring & a sprinkling of dissipated coconut.

- Step
- Mix all ingredients together well, then cover & keep refrigerated overnight. Serve as required.
